The 8.5×11 was designed with the cardmaker in mind: a gusseted main compartment holds 25+ sheets of cardstock, a front pocket keeps scraps separate, and three back compartments hold card bases, sentiments, and larger sheets or sticker sets.
The 12×12 is ideal for scrapbookers: the gusseted main compartment stores 12×12 paper stacks, the front pocket holds scraps or accents, and three back slots organize photos, ephemera, and sticker sheets — your whole project, visible and ready when inspiration strikes.

I use these for storage of my 12x12 Designer Papers. Smaller ones for scraps that I;ll use later.. And....I put a ton of address labels in them and postage stamps that I use for sending cards in the mail. I used paper envelopes before and they just get ripped apart...so I love using these pockets for that purpose as well. I wish I could get a whole lot of them, but the budget won't allow...but, I love the ones I have.
